“"Whatever can be homemade will be made from scratch,” Dill said. “The pie dough, for example, is made from scratch. The cheesecake is light and fluffy, not like any cheesecake you’ve had before.”
Dill, who earned his associate’s degree from Mitchell Technical Institute in South Dakota, brings years of culinary experience, including working at steakhouses, barbecue restaurants, and assisted living centers where he aimed to make special desserts for residents.
“I worked in assisted living where desserts weren’t a focus, but I felt like they deserved something special, even if it was just a simple custard,” Dill said.
Bluegrass Bourbon Dessert Bar will offer a rotating seasonal menu and holiday-themed items. Customers can expect options such as chocolate cake with peanut butter whiskey frosting or bourbon caramel sauce. Alcohol-infused desserts are available, but Dill emphasizes that the alcohol can be omitted for a family-friendly experience.
“Everything is individualized or shareable,” Dill said. “It can be something for date night, after the symphony, or just a cup of fresh-ground coffee with homemade pie.”
The bar will source Kentucky-made spirits whenever possible, including selections from Green River Distilling Co. and Old Bardstown.
Dill said he plans to incorporate community support into his business model, including raffles for local charities and donating unsold desserts after three days.
“If there are people in need, they’ll be able to get a pecan pie, chocolate cake, apple pie, or cheesecake,” he said.
Dill said the business is also working toward gluten-free, dairy-free, and sugar-free options.
“We take allergies very seriously,” he said. “We have separate mixers for non-gluten and non-nut products, and my staff knows how important that is.”
Carryout options will be available, but Dill said the bar will not use third-party delivery services due to age verification concerns for alcohol-infused desserts.
Dill noted that local artist Emma Pearcy contributed original artwork to the space, with a focus on Kentucky culture.
